All time favorite curry recipe: Mild Golden Curry (may also be called Butter Curry, make sure its for chicken) 1 pound chicken breast cut into bite size pieces ½ large onion, chopped                 ¾ Cup water 1 can shredded coconut or coconut milk                           2 – 3 Tablespoons sugar Olive oil Saute onion in small amount of olive oil until translucent.  Add chicken.  Cover and cook over medium heat until no longer pink in center. Add remaining ingredients and simmer, uncovered, stirring as needed (about 15 – 20 minutes) to cook chicken through and thicken sauce.  Serve over rice or naan bread.     Condiments:  chopped green onions, shredded coconut, something salty (chopped nuts or sunflower seeds),  and something sweet (raisins, craisins, chopped dried fruit of any kind…) Serves: 5   Zoom

I worked monday night, had class all day tuesday (9-8:15, with only a two hour break), and then I was supposed to work tuesday night and go all day wednesday again… let me think about that… No thanks. Begging for the night off = successful. And a nicely rested Quincey was able to witness the birth of a robot baby on Wednesday afternoon…. wtheck? Oh yeah, this semester is labor and delivery. Yeehaw. I never want to give birth. Via twentythree :
